Christmas 2010


This year, we got to spend a wonderful Christmas weekend with my (Clair's) family in Arkansas. We arrived in Arkansas the evening of December 23. Christmas Eve was spent in quality time with my parents. My mom and I partook in pedicures together (thanks, Mom!) we saw "True Grit" and had Mexican food for dinner. Such a nice day. Then on Christmas day, we woke up and opened gifts and stockings and had a lovely breakfast casserole. Later, my dad, Jon and I drove down to Fort Smith to pick up my Mamma (Dad's mom) and brought her back up the hill to Springdale. We spent the rest of the day relaxing and talking. Sunday morning, my brother came over with his 2 daughters, and we got to watch them open a lot more gifts! We had a great Christmas dinner on Sunday with a lot of the Mobley family and then headed back north to Chicago. It's back to work tomorrow for 2 days and then we'll drive south to Tennessee on Wednesday for New Years celebration with the Grants and Franks!

Crafty Owl




Today, my friends Laura and Hana and I found this pattern to make these cute stuffed owls! (http://www.sewsimple.com/articles/otis_the_owl_patterns) We picked up some fun fabric remnants at Vogue Fabric in Evanston and got to work. After about 2 hours of cutting out pieces and sewing them all together, this is the result! Hopefully Seth will appreciate my handiwork someday, but for now, I'm pretty proud of myself.

Another Childhood Favorite

Spam Casserole!

1 pkg curly (egg) noodles - cooked & drained
1 Cup cottage cheese
1 cup (or more to taste) sour cream
1 small onion, grated
garlic salt to taste
1 can spam, diced
1 8oz. can tomato sauce

Combine all ingredients and bake at 350 degrees until heated through. Deeelish!

Seth Isaac Lee

On Monday, November 15, 2010, Jon and I went to have our 20 week ultrasound. We got to see (and take home) many images of our little baby boy, Seth Isaac Lee. It is so incredible to be able to see our child at this point. It's hard to imagine that that little human being is living inside of me right now. We are praying that God will continue to grow Seth as a healthy baby and that the remainder of the pregnancy will go smoothly. Here are a few pictures from Monday!

I'm craving pancakes!

I have very fond memories of my mom making me Mickey Mouse pancakes on Saturday mornings as a child, and still love to go home and enjoy those pancakes! Saturday morning pancakes have also become a sort of tradition in our Lee household and I hope to continue that with our child!

Mom's Pancake Recipe

1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 heaping tbsp. sugar
1 cup milk
1 egg

Combine all dry ingredients (I like to stir them all together with a fork or whisk.) Separate the egg, adding the yolk to the dry mixture and putting the white in a separate small bowl. Stir the milk into the dry mixture until well combined. Beat the egg white until stiff peaks form. Fold the egg white into your batter (you want this to be fluffy, but not lumpy.) Pour the batter onto your griddle or skillet and flip the pancakes when they are all bubbly. Enjoy!!! :)

Another One Bites the Dust

Onto blog home #3! Hopefully this one will stick.

It's been a whirlwind of a year (can't believe it's already November! holy moly!) We are now almost 18 weeks pregnant and will find out in 2 weeks whether we are having a boy or a girl! Wow. It'll just be so amazing to know what this little being is and to be able to call it by its name (and not call it an 'it' anymore. haha)

So, the plan for the next 5 months includes finding a new apartment, having a healthy pregnancy/baby, figuring out the whole job situation (for both of us!) and trying to enjoy every minute of this amazing time in our lives! I hope to update this site a lot more often than the previous ones since it is much more user friendly. Hope you all enjoy it!
