Ballpark Pretzels

Every week, our church small group does dinner together before our discussion time and each week has a different theme for the potluck meal.  Last week, our theme was Ballpark Food! Any and everything you can get while watching baseball at your favorite ballpark.  I had all the ingredients for soft pretzels, so I thought I'd give it a shot!  I used this recipe and had, unfortuneatly mixed success with it.  Next time, I think I'll try a different recipe just to see what the differences are.

The results looked good, but were kind of strange.  Parts of them tasted pretty good, while other parts tasted really bad! (To me, it seemed almost like pockets of yeast had gathered in areas and gave a very bitter taste...not sure though.  The dough was mixed well in a KitchenAid mixer.)  If anyone else tries this recipe or finds a better one, let me know your results!!!

Tonight's Dinner

This is a recipe I loved growing up.  The original recipe my mom gave me has some kind of interesting, very exact measurements and cooking times.  My version is a little less strict.  :)

Quick & Easy Skillet


Ingredients: 
1 lb. ground beef
2 cups macaroni noodles
2 cups canned diced tomatoes
1 1/2 cups sour cream
1 bell pepper, diced
1 small onion, diced
2 tbsp. sugar
1 tbsp. chili powder
1 tsp. seasoned salt
1/2 tsp. salt


By the way, it's really fun to arrange and photograph seasonings!


Brown the ground beef in a large, deep pan.  Then add all other ingredients. 
Give it a good stir, then cover and simmer for 18 minutes (or until noodles are cooked.)


Eat & enjoy!  :)


I also made a special dessert today, but I'm going to see how it tastes before I post it on here! haha

I love one pot meals!

Last night was another Real Simple recipe night.  This time it was roasted tilapia, potatoes and lemons and it was quick and tasty!  I just love the simplicity of meals that cook all in the same dish.  So, here's the recipe for the tilapia, but you should definitely also check out Real Simple's other one pot meals! Fun and delicious!

Chicken Curry (in a hurry!)


Last night, I made this recipe from Real Simple. It was quite tasty, but next time, I think I will add more curry powder and maybe some red pepper flakes for added spice! Enjoy!

Yummy Tilapia

Tonight we made a delicious dish and I'd like to share it with you!

Ingredients:
tilapia
herbs de provence
kosher salt
butter
lemon

Directions:
1. Rub fish with herbs de provence & sprinkle with kosher salt.
2. Melt butter (amount is up to you!) in a medium skillet.
3. Cook fish in butter. Squeeze lemon juice over the fish while cooking.
4. EAT! yum. :)

Another Childhood Favorite

Spam Casserole!

1 pkg curly (egg) noodles - cooked & drained
1 Cup cottage cheese
1 cup (or more to taste) sour cream
1 small onion, grated
garlic salt to taste
1 can spam, diced
1 8oz. can tomato sauce

Combine all ingredients and bake at 350 degrees until heated through. Deeelish!

I'm craving pancakes!

I have very fond memories of my mom making me Mickey Mouse pancakes on Saturday mornings as a child, and still love to go home and enjoy those pancakes! Saturday morning pancakes have also become a sort of tradition in our Lee household and I hope to continue that with our child!

Mom's Pancake Recipe

1 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 heaping tbsp. sugar
1 cup milk
1 egg

Combine all dry ingredients (I like to stir them all together with a fork or whisk.) Separate the egg, adding the yolk to the dry mixture and putting the white in a separate small bowl. Stir the milk into the dry mixture until well combined. Beat the egg white until stiff peaks form. Fold the egg white into your batter (you want this to be fluffy, but not lumpy.) Pour the batter onto your griddle or skillet and flip the pancakes when they are all bubbly. Enjoy!!! :)
